Spinach, Black Bean, Fennel, Tomato & Pomegranate Seeds

Black Bean, Pomegranate, Avocado, Green Onion & Feta

Homemade Tacos are one of my favorite meals, and I make them a lot! I like to play around with different combinations each time. Right now one of my favorite things to add to my tacos is Pomegranate Seeds. They add an unexpected burst of flavor and taste great in most taco combos. 

Homemade Salsa:
  • Tomatoes
  • Red Onion
  • Jalapeno
  • Garlic
  • Fresh Lime Juice
  • Cilantro
  • Salt, Pepper, Cayenne, Turmeric 
In a food processor, combine all ingredients and pulse until you reach your desired consistency.

Homemade Tortillas:
  • Maseca - Instant Corn Masa Flour
  • Water
  • Salt
Combine all ingredients in a bowl and mix until the Masa has absorbed the water. Form the dough into small round balls. Use a tortilla press to flatten. If you do not have a tortilla press, try lining two hardcover books with saran wrap and use them to press each ball into a tortilla. Heat a medium size pan until it is VERY hot and cook each tortilla on the dry, hot pan for 1-2 minutes on each side.

  • Black Beans, Grilled Chicken, Spinach, Pomegranate Seeds, Tomatoes, Cheddar Cheese, Feta Cheese, Avocado, Black Olives, Green Onions, Fennel, Lime, & Cilantro

Grilled Cheese & Popcorn Bar

S'Mores Popcorn

Rosemary, Parmesan and Garlic Popcorn

Brie, Apple, Spinach & Balsamic Grilled Cheese
Jalapeno & Cheddar Grilled Cheese
Mozzarella,  Tomato & Basil Grilled Cheese


The Oscars is a great excuse to get together with friends and host a party. Tonight a few friends and I decided to do a Grilled Cheese and Popcorn Bar for our Jams & Jewels Party. Dressed in our pajamas and favorite jewelry, we were both glam and cozy while allowing room for popcorn, grilled cheese and champagne.

S'Mores Popcorn:

  • Popcorn
  • Graham Crackers (crushed)
  • Semi-Sweet Chocolate Chips (melted)
  • Marshmallows
  • Sea Salt
  • Butter
Melt butter and marshmallows together and pour over popcorn. Next, coat popcorn with melted chocolate chips. Stir in crushed graham crackers, extra marshmallows and sea salt.

Rosemary, Garlic and Parmesan Popcorn:

  • Popcorn
  • Rosemary
  • Parmesan (grated)
  • Garlic
  • Olive Oil
Using a mortal and pestle, crush rosemary, garlic and olive oil together. Use the flavored olive oil to cook the popcorn. Then, stir in the reserved garlic and rosemary and sprinkle with parmesan.

Grilled Cheese:

  1. Brie, Green Apple, Spinach and Balsamic Vinegar 
  2. Cheddar Cheese and Jalapenos 
  3. Mozzarella, Tomato and Basil
Slice 1/2 inch pieces of fresh french bread and lightly butter one side. Top with your favorite flavor combination and grill on each side until the cheese melts thoroughly.
