Spinach, Black Bean, Fennel, Tomato & Pomegranate Seeds

Homemade Tacos are one of my favorite meals, and I make them a lot! I like to play around with different combinations each time. Right now one of my favorite things to add to my tacos is Pomegranate Seeds. They add an unexpected burst of flavor and taste great in most taco combos. 

Homemade Salsa:
  • Tomatoes
  • Red Onion
  • Jalapeno
  • Garlic
  • Fresh Lime Juice
  • Cilantro
  • Salt, Pepper, Cayenne, Turmeric 
In a food processor, combine all ingredients and pulse until you reach your desired consistency.

Homemade Tortillas:
  • Maseca - Instant Corn Masa Flour
  • Water
  • Salt
Combine all ingredients in a bowl and mix until the Masa has absorbed the water. Form the dough into small round balls. Use a tortilla press to flatten. If you do not have a tortilla press, try lining two hardcover books with saran wrap and use them to press each ball into a tortilla. Heat a medium size pan until it is VERY hot and cook each tortilla on the dry, hot pan for 1-2 minutes on each side.

Toppings:
  • Black Beans, Grilled Chicken, Spinach, Pomegranate Seeds, Tomatoes, Cheddar Cheese, Feta Cheese, Avocado, Black Olives, Green Onions, Fennel, Lime, & Cilantro
